defconfig: sdm845: enable CONFIG_UFS_FAULT_INJECTION

CONFIG_UFS_FAULT_INJECTION would enable fault-injection framework to
simulate error conditions in the UFS controller and verify error
handling mechanisms implemented in UFS host controller driver.
